Instructions

  1. Cream the Butter and Sugars: In a bowl, add the butter, brown sugar, and granulated sugar. Mix together using a spoon or electric mixer until fully combined and the mixture looks soft and creamy.
  2. Add Cream and Vanilla: Pour in the double cream or heavy cream along with the vanilla extract, mixing until thoroughly combined into the buttery sugar mixture.
  3. Incorporate Dry Ingredients: Add the plain flour, baking soda, and a pinch of salt to the bowl. Gently mix until a soft dough forms, being careful not to over-mix.
  4. Mix in Chocolate Chips: Fold in the chopped dark chocolate or chocolate chips evenly throughout the dough.
  5. Chill the Dough: Place the bowl in the refrigerator and let the cookie dough chill for at least 30 minutes to firm up.
  6. Preheat Oven & Prepare Baking Tray: About 10-15 minutes before baking, preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
