Ingredients

Scale

Vegetables and Aromatics

  • 6 cups peeled and diced potatoes
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped (any color)
  • 2 celery stalks, diced

Spices and Seasonings

  • 1 teaspoon smoked paprika
  • 1 teaspoon Cajun seasoning (more to taste)
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 teaspoon cayenne pepper (optional, for heat)

Liquids and Dairy

  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or half-and-half
  • 1 tablespoon butter

Garnish

  • 1/2 cup shredded cheddar cheese (optional)
  • 1/4 cup chopped green onions

Instructions

  1. Combine Ingredients in Slow Cooker: Add the diced potatoes, chopped onion, minced garlic, chopped bell pepper, diced celery, smoked paprika, Cajun seasoning, dried thyme, salt, pepper, and broth into your slow cooker. Stir gently to combine the ingredients.
  2. Slow Cook the Soup: Cover and cook the mixture on low heat for 6 to 7 hours or on high heat for 3 to 4 hours, until the potatoes are very soft and fully cooked.
  3. Mash Potatoes for Texture: Use a potato masher or an immersion blender to partially mash the potatoes, leaving some chunks to maintain texture and thicken the soup naturally.
  4. Add Cream and Butter: Stir in the heavy cream (or half-and-half), butter, and cayenne pepper if you want extra heat. Continue cooking on high for another 15 to 20 minutes until everything is hot and flavors meld together.
  5. Adjust Seasoning and Serve: Taste the soup and add any additional salt, pepper, or Cajun seasoning as desired. Serve the soup hot, garnished with shredded cheddar cheese and chopped green onions for a fresh, cheesy finish.

Notes

  • You can substitute heavy cream with half-and-half or evaporated milk for a lighter version.
  • Adjust the amount of Cajun seasoning and cayenne pepper to control the spice level.
  • Use vegetable broth to make the recipe vegetarian-friendly if desired.
  • This soup thickens as it cools; reheat gently with additional broth if needed.
  • Garnishes such as crispy bacon or sour cream can also enhance the flavor.
