Ingredients

Scale

Wet Ingredients

  • 2/3 cup milk of choice
  • 1 1/2 tsp white or cider vinegar
  • 2 1/2 tbsp oil (or banana, applesauce, or almond butter for oil-free alternative)
  • 1 tsp pure vanilla extract

Dry Ingredients

  • 1 cup spelt, white, or oat flour
  • 1 1/2 tsp baking powder
  • 1/2 cup sugar (or xylitol for sugar-free)
  • 1/4 tsp salt

Topping

  • Powdered sugar or sugar-free powdered sugar for coating

Instructions

  1. Prepare Wet Ingredients: In a small bowl, whisk together the milk, vinegar, oil (or oil alternative), and vanilla extract until well combined.
  2. Preheat and Grease: Preheat your oven to 350°F (175°C). Grease a mini or regular donut pan or, alternatively, a mini muffin tin to prevent sticking.
  3. Mix Dry Ingredients: In a large bowl, combine the flour, baking powder, sugar (or sugar alternative), and salt. Stir well to evenly distribute all dry ingredients.
  4. Combine Wet and Dry: Pour the wet mixture into the dry ingredients. Stir gently until just evenly mixed, being careful not to overmix to keep the donuts light and tender.
  5. Fill the Pan: Immediately pour or spoon the batter into the prepared donut or muffin pan, filling each cavity about 3/4 full to allow room for rising.
  6. Bake Donuts: Bake in the preheated oven for approximately 8 minutes, or until the donuts have risen and a toothpick inserted into the center comes out clean.
  7. Cool Completely: Allow the donuts to cool completely in the pan before attempting to remove them to prevent breaking.
  8. Apply Topping: Pour powdered sugar into a deep bowl, then dip the cooled donuts into the sugar or sprinkle the powdered sugar generously over the tops. Serve immediately or store in an airtight container.

Notes

  • For an oil-free version, substitute oil with equal parts mashed banana, applesauce, or almond butter.
  • Use xylitol as a sugar substitute for a sugar-free alternative.
  • Ensure donuts cool completely before applying powdered sugar to avoid melting.
  • Donuts can be stored in an airtight container for up to 2 days for optimal freshness.
  • You can use spelt, white all-purpose, or oat flour depending on your dietary preferences and availability.
