  • Olive oil for cooking
  • 1 medium white onion, finely diced
  • 2 garlic cloves, finely diced
  • 500g ground beef (12% fat)
  • 1 tablespoon tomato puree
  • 80ml red wine
  • 500g tomato passata
  • 240ml beef stock
  • ½ tablespoon Worcestershire sauce
  • ½ bunch fresh basil, chopped
  • ½ teaspoon dried oregano
  • ½ teaspoon sugar
  • 20g freshly grated parmesan
  • 200g spaghetti

Bread Bowls and Topping

  • 6 crusty white rolls
  • 100g butter, melted
  • 30g parmesan for butter
  • 1 tablespoon fresh parsley, finely chopped
  • 3 garlic cloves, made into paste
  • 200g mozzarella, shredded

Instructions

  1. Prepare the Sauce: Heat a splash of olive oil in a pan over medium heat. Add the finely diced onion and cook until golden and translucent. Stir in the finely diced garlic and cook for another minute until fragrant.
  2. Cook the Beef: Add the ground beef to the pan and brown thoroughly, breaking it up with a wooden spoon. Once browned, mix in the tomato puree and stir to combine well.
  3. Add Liquids and Simmer: Pour in the red wine and allow it to reduce slightly by simmering for a few minutes. Add the tomato passata, beef stock, Worcestershire sauce, chopped fresh basil, dried oregano, and sugar. Stir well and let the sauce simmer gently for 25 minutes until it thickens. Finish by stirring in the freshly grated parmesan.
  4. Prepare the Bread Bowls: Cut the tops off the crusty rolls and hollow out the centers, leaving a thick enough wall to hold the sauce and pasta. In a bowl, mix the melted butter with garlic paste, chopped parsley, and parmesan cheese. Brush this garlic butter mixture inside and outside of each roll to infuse flavor and help crisp the bread when baked.
  5. Cook the Spaghetti: Boil the spaghetti in salted water according to package instructions until al dente. Drain the pasta and immediately transfer it into the sauce pan with the simmered beef tomato sauce. Toss well to coat the spaghetti evenly with sauce.
  6. Assemble the Bread Bowls: Spoon the spaghetti and sauce mixture into each hollowed bread roll, ensuring the sauce is visible on top. Sprinkle shredded mozzarella generously over the filled bread bowls.
  7. Bake and Serve: Place the filled bread bowls on a baking tray and bake in a preheated oven at 350°F (175°C) for 8-10 minutes until the bread is crisp and the cheese is melted. For a golden-brown cheese topping, optionally broil the bowls for 1-2 minutes. Serve hot and enjoy!

  • You can substitute ground beef with ground turkey or plant-based mince for a different protein option.
  • If you do not have red wine, beef broth or extra stock can be used as a substitute.
