  • 1 (10oz) can diced tomatoes & green chiles, drained

  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper, to taste

Instructions

  1. Microwave cauliflower rice: Microwave the frozen cauliflower rice according to the package instructions, venting the bag to allow steam to escape. Set aside once cooked.
  2. Sauté onions: Heat olive oil in a skillet over medium heat. Add diced onions and cook for about 5 minutes until they are tender and translucent.
  3. Combine ingredients: Add the cooked cauliflower rice, drained diced tomatoes with green chiles, garlic powder, cumin, and chili powder to the skillet. Stir thoroughly so the spices evenly coat the cauliflower rice.
  4. Simmer flavors: Allow the mixture to cook for approximately 5 minutes, letting the cauliflower rice absorb the flavors and everything heat through.
  5. Season and serve: Taste the dish and season with salt and pepper to your preference. Serve warm. Store any leftovers in an airtight container in the fridge for up to 3 days.
