Instructions

  1. Boil Water: Bring a large pot of water to a rolling boil to cook the brown rice noodles.
  2. Cook Noodles: Add the noodles to the boiling water and cook according to package instructions until tender. Drain and set aside.
  3. Sauté Garlic: Finely mince the garlic cloves and heat 1 tablespoon of oil in a sauté pan over low heat. Add the minced garlic to the pan.

  5. Prepare Sauce: Remove the pan from heat and add the peanut butter, tamari or soy sauce, rice vinegar, toasted sesame oil, sriracha, maple syrup or honey, red pepper flakes, and optional chili garlic sauce. Start by adding 1/3 cup of hot water and whisk thoroughly to create a smooth sauce.
  6. Adjust Sauce Consistency: Gradually add more hot water (up to 1 cup total) to achieve your preferred sauce thickness. The amount of water needed will depend on the brand of peanut butter and your taste preferences.
  7. Taste and Adjust: Sample the sauce and adjust the seasoning by adding more soy sauce for saltiness or more sriracha for heat, according to your liking.
  8. Combine Sauce and Pasta: Add about half of the sauce to the drained noodles and toss well to coat evenly.
