Ingredients

Scale

Donut Batter

  • 1 tbsp unsalted butter
  • ¾ cup sugar
  • 1 egg
  • ¾ tsp vanilla extract
  • ½ cup buttermilk
  • ¾ cup cake flour
  • ¾ cup all-purpose flour
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1215 strawberries (about 1 cup pureed)

Glaze

  • Powdered sugar (quantity as needed for glaze)
  • Milk (quantity as needed for glaze)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the perfect temperature for baking the donuts.
  2. Prepare Strawberry Puree: Trim the strawberries and pulse them in a food processor until you get a chunky puree. Avoid over-pulsing so it doesn’t turn completely liquid. Set aside.
  3. Cream Butter, Sugar, and Egg: In a large bowl, mix the butter, sugar, and egg on medium-high speed for about 2 minutes until the mixture becomes creamy and well combined.
  4. Add Wet Ingredients: Incorporate the vanilla extract, buttermilk, and the prepared strawberry puree into the creamed mixture. Mix until thoroughly blended.
  5. Combine Dry Ingredients: Add the cake flour, all-purpose flour, baking soda, baking powder, and salt to the wet mixture. Mix on low speed just until combined, being careful not to overmix. Scrape the sides of the bowl if necessary.
  6. Prepare Donut Tin: Transfer the batter into a large piping or freezer bag. Seal the bag and snip off a corner for easy piping. Grease your donut tin thoroughly.
  7. Fill Donut Tin: Pipe the batter into each donut mold, filling only halfway to allow room for rising during baking.
  8. Bake: Place the tin on the middle rack of the preheated oven and bake for 7-8 minutes until the donuts are golden and a toothpick inserted comes out clean.
  9. Make the Glaze: While the donuts bake, whisk together powdered sugar and milk in a bowl until smooth and slightly runny for easy glazing.
  10. Glaze Donuts: Remove the donuts from the tin and place them on a wire rack. Pour the glaze over each donut, allowing excess to drip off, or dip the tops individually. Let the glaze harden for 20-30 minutes before serving. Enjoy your fresh strawberry donuts!

Notes

  • Do not overpulse strawberries; a chunky puree gives the best texture.
  • Avoid overmixing the batter to keep donuts tender and light.
  • Fill donut tins halfway to prevent batter overflow during baking.
  • Use a piping bag or freezer bag for neat and easy donut batter filling.
  • Glaze hardens better if allowed to set at room temperature for 20-30 minutes.
