Salad Ingredients
- 3 cups super greens mix (baby spinach, baby arugula, red & green Swiss chard, chicory, green cabbage, chopped Brussels sprouts)
- 1 cup kale, roughly chopped
- 1 cup strawberries, diced
- 1 cup blackberries
- 1 cup blueberries
- ¼ cup shelled pistachios, roughly chopped
- 2 tablespoons pepitas
- Blueberry goat cheese, crumbled (or regular goat cheese if blueberry goat cheese is unavailable)
Dressing Ingredients
- ¼ cup plain Greek yogurt (nonfat)
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon mustard
- 1 tablespoon extra virgin olive oil
- ¼ cup fresh mint leaves, packed
- ¼ cup fresh parsley leaves
- 2 tablespoons fresh oregano leaves, packed
- Coarse salt, to taste
- Ground black pepper, to taste
- Prepare the dressing: In a blender or food processor, combine the plain Greek yogurt, freshly squeezed lemon juice, mustard, olive oil, fresh mint, parsley, and oregano leaves. Pulse until the mixture is smooth and well blended. Season with coarse salt and ground black pepper to taste. Set the dressing aside.
- Assemble the salad: In a large bowl, combine the super greens mix, chopped kale, diced strawberries, blackberries, blueberries, shelled pistachios, and pepitas. Toss gently to mix all the ingredients evenly.
- Toss with dressing: Pour the prepared creamy lemon herb dressing over the salad mixture. Toss everything together until the salad is well coated with the dressing.
- Add cheese and serve: Sprinkle the crumbled blueberry goat cheese (or regular goat cheese) on top of the salad. Add additional fresh ground black pepper if desired. Serve immediately and enjoy this fresh, nutrient-dense berry salad.
Notes
- You can substitute the blueberry goat cheese with regular goat cheese if unavailable.
- Use nonfat Greek yogurt to keep the dressing light and creamy.
- Feel free to add other nuts or seeds for extra crunch.
- This salad is best served fresh but can be stored in the refrigerator for up to 1 day without the dressing.
- Adjust salt and pepper to your taste preference for the dressing and finishing seasoning.
