Instructions

  1. Prepare the base: Line a medium baking sheet with parchment paper. Slit each date lengthwise to remove pits if needed. Spread the dates evenly on the parchment paper in a rectangular shape, such as a 4×6 pattern, pressing them down gently to form a compact layer.
  2. Add the peanut butter layer: Evenly spread the creamy peanut butter over the arranged dates to cover completely. Then sprinkle the dry roasted peanuts evenly over the peanut butter layer to add crunch.
  3. Melt the chocolate: Place the chocolate chips and optional coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until the chocolate is mostly melted. Stir thoroughly until smooth and fully melted.
  4. Top with chocolate: Pour the melted chocolate evenly over the peanut butter and peanuts layer. Use a spatula to spread it out so that all the layers underneath are fully covered. Sprinkle coarse sea salt on top if using.
  5. Set the bark: Transfer the baking sheet to the freezer and let the bark set for 60 to 90 minutes, or until firm and solid.
