Ingredients

Scale

Sweet Potatoes

  • 2 small (or 1 large) sweet potato, peeled and cubed
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • Olive oil spray

Bowls

  • 1/2 pound ground beef
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp paprika
  • 1/4 tsp chili flakes
  • 1/2 tsp salt
  • 1 cup cottage cheese
  • 1 avocado, cubed
  • 1/2 tbsp hot honey
  • Chili flakes, to taste

Instructions

  1. Prepare The Sweet Potatoes: Peel and cut the sweet potatoes into small cubes. Season them with garlic powder, paprika, and salt. Lightly spray with olive oil and place in the air fryer. Cook at 375°F (190°C) for 15 minutes or until the sweet potatoes are golden and tender when pierced.
  2. Cook The Ground Beef: Heat a skillet over medium-high heat. Add the ground beef along with onion powder, garlic powder, paprika, chili flakes, and salt. Stir occasionally and cook until the beef is fully browned and cooked through, about 7-10 minutes.
  3. Assemble The Bowls: Divide the cooked sweet potatoes and ground beef evenly between two bowls. Add half of the cubed avocado to each bowl. Top each with 1/2 cup of cottage cheese. Finally, drizzle hot honey over the bowls and sprinkle additional chili flakes to taste for an extra kick.

Notes

  • Use olive oil spray to keep the sweet potatoes light and crispy without excess oil.
  • Adjust the amount of chili flakes according to your preferred spice tolerance.
  • Hot honey adds a unique sweet-heat balance but can be substituted with regular honey if unavailable.
  • For a vegetarian version, substitute ground beef with seasoned sautéed mushrooms or lentils.
  • Leftovers can be stored in the refrigerator for up to 3 days; reheat sweet potatoes and beef separately for best texture.
