  • 7 to 8 cups seedless watermelon, cut into ¾ inch cubes

  • Fresh basil leaves, thinly sliced (plus more for garnish)

Honey Lime Dressing

  • Juice of 1 ½ limes
  • 1 tablespoon extra virgin olive oil
  • 1 to 2 tablespoons honey (to taste)
  • A pinch of salt

Instructions

  1. Make the honey lime dressing: In a mason jar, combine the lime juice, olive oil, honey, and salt. Shake vigorously until the ingredients are well combined and the dressing is emulsified. Taste and adjust the honey or salt as needed for your preferred balance of sweetness and seasoning.
  2. Combine the salad ingredients: In a large serving bowl, add the cubed watermelon, fresh blueberries, thinly sliced mint and basil leaves, and ¾ cup of crumbled feta cheese. Pour the honey lime dressing over the mixture and toss gently but thoroughly to ensure all the fruit and herbs are coated evenly with the dressing.
